Ravioli crocante of red scorpionfish

Cut 6 sheets of Chinese Wonton paste in half. Obtain 12 equal rectangles.
 Place a piece of scorpion fish cake at one end of the paste.
 Dampen the edges of the rectangle and join the two ends like a pasty.
Press the outline of the ravioli down with a fork. Do the same with the other rectangles.
Fry in plenty of oil and set aside. 
Finish and presentation: on each bamboo stick, skewer 2 ravioli and serve while still hot, accompanied by a shot of shellfish cream or any stock, juice or soup you like.
